We sell a wide variety of local fish in season, and you can buy just one or two fish retail. We try to prepare and sell fish that are brought in that day.
We process them one by one by hand.
These days, I can't sell whole fish, so I started processing them into minced fish. Today I'm processing sea bream by request, and the hardest part is removing the scales (laughs). All the big processing factories have machines, but we do it by hand, one by one. The amount of fish caught and the number of boats is decreasing, but I still want everyone to be able to enjoy fish.
